Easy BBQ Garlic Chicken with Pomegranate Marinade

Habibis This past week I received a delivery from Habibis Mediterranean Foods, an all natural, authentic Lebanese food company based in Vancouver. The package included a sampling of delicious products, along with some recipe recommendations that I was dying to try out.

So, with an excuse to cook, we made Saturday night plans with friends. On the menu: Habibis Hummus and Black Bean dips, BBQ Garlic Chicken with Pomegranate Marinade and a Spinach Salad with Easy Garlic Dressing. I also whipped up some Sweet Potato and Zucchini Fritters.

While marinating the chicken, we dug into the Hummus and Black Bean dip. Seriously creamy and delicious. The Black Bean was my favourite – complex and interesting.

The following recipes were supplied by Habibis, with slight modifications by me.

BBQ Garlic Chicken with Pomegranate Marinade

Ingredients:BBQ Chicken

  • Bone-in chicken thighs
  • Coat in desired amount of Habibis Lebanese Garlic Sauce
  • Season with Salt and Pepper

Place chicken thighs in a large bowl. Coat with a generous amount of the garlic sauce. Season with salt and pepper. Let sit for 30 minutes or so. Depending on your prep time you could even marinate for a few hours or overnight in the fridge.

In Another Bowl mix

  • 1/4 cup of pomegranate juice
  • Extra Virgin Olive Oil
  • A tbs of minced green jalapenos
  •  1-2 tablespoons tomato paste

After the chicken has marinated in the garlic sauce, pour this mixture on top and stir to coat. Let sit while you fire up the grill. Place chicken thighs on the BBQ and cook through.

The marinade gets deliciously caramelized on the outside while maintaining tender meat inside. Plus, so much flavour! Perfect BBQ’d chicken.

Garlic Salad Dressing

  • Habibis Lebanese Garlic Sauce
  • A touch of Balsamic vinegar
  • Lemon juice
  • Extra Virgin Olive oil
  • Pinch of Salt

Add all the ingredients in a jar or dressing container and shake it up. For extra flavour add fresh herbs like basil, cilantro or parsley into the dressing!

The full meal

In addition to using the Garlic Spread in these recipes, I’ve been slathering it on nearly everything! Last night for dinner I added it as a condiment to my turkey burger, making a garlic aioli by mixing it with some mayo. Today I spread it on gluten-free bread before frying my Grilled Cheese and Avocado sandwich for lunch. There are so many delicious ways to use it!

I was thoroughly impressed with the products Habibis shared with me, and will definitely be adding them to my shopping list.
